INTRODUCTION

Food safety has become a very important issue. Government, industries , and consumers strive to achieve food safety to protect human health and facilitate trade. In the last few years, viruses have emerged as the most frequent causative agent in foodborne illnesses in the northern hemisphere. Although not directly linked to foodborne illnesses, avian flu and recently swine flu have become important issues affecting livestock worldwide, including Indonesia and SEA regions. Mirobial pathogens are likely to cause foodborne illnesses in areas of Southeast Asia; additionally, they are often blamed for export detention. Salmonella, for example, is still the leading cause of export detention of seafood ; whilst others may have contributed to the sporadic outbreaks in domestic foods.

Another important issue regarding food safety is adulteration, which is frequently conducted for economic reasons. Another relevant example is the addition of Melamine to milk in China, and misuse of several chemicals as food additives are continuing issues; esepcially in developing country such as Indonesia. Other more recent concerns such as migration of packaging materials also need to be addressed proportionally.

Food industries have been encouraged to use science-based appoach in managing food safety hazards while governments are also urged to establish the best management options to provide safe foods. Th is objective could be met through the use of emerging technologies and/or the modern risk management framework.
